Impending frost/freeze in the vegetable garden

With the temperatures expected to hover at freezing tonight and early tomorrow morning, I’m already thinking of my vegetable garden.  I know that frost actually improves the flavor of Brussels sprouts, collards, kale, parsnips, and salsify roots.  Other hardy root crops include garlic, horseradish,  kohlrabi, radish, rhubarb, and turnip.

Asparagus, broccoli, cabbage, chives, Claytonia or miner’s lettuce, dandelion, endive and escarole,  kohlrabi, leeks, mustard, parsley, and spinach can similarly withstand frost.

The Brussel sprouts, garlic, leeks, and parsnips are so cold -tolerant that they can be left in the garden and allowed to freeze outright.  The others, while surviving repeated frost, are best harvested before they freeze solid.
